Summer Salad Recipe that the Whole Family will Enjoy – with M&S

We’ve had such a gorgeous summer to date, that I’d really rather not talk about it for too long for fear of spoiling the run of good weather we’ve had. For us it’s meant plenty of meals in the garden which means a much more relaxed mealtime all round for everyone! It’s been glorious!

Mealtime Dilemmas Solved with M&S

We still have the perpetual struggle though, what to rustle up for mealtimes that the whole family will enjoy that’s quick and nutritious to boot – these things are hard to come by!

So I was thrilled when Marks and Spencer came along with a solution for us; this really easy to make and especially tasty Mexican Beef Fajita Salad!

I whipped the salad up on Friday evening for the whole famalam and it was a big hit with everyone.

Full of fresh ingredients and two of your five a day

It’s essentially a really amazing salad, with bistro leaves, avocado, corn on the cob and quinoa. What makes it different is the addition of the extra lean one minute steak!

Fully Traceable Beef

Now as a vegetarian, I don’t often cook steak, but the Smalls and Harrogate Papa all eat meat and one of the Big Girls will ALWAYS order a steak burger when we dine out! So when it comes to knowing meat heritage, it was good to know that M&S is the only national retailer which can trace 100% of its beef back to the farm and individual cow.

They all loved the steak, mildly spiced with some fajita seasoning and it was obviously so quick and easy to cook! And did you know, every piece of M&S beef is British?!

A big hit with the Smalls

The dressing on the salad was really delicious too and very simple with just lime, salsa and olive oil. All in all it was a big hit, the Big Girls loved it and the Small Boy enjoyed the steak (he wasn’t convinced by the leaves! Ha!) and there have been calls to make it again soon, which I plan to! I enjoyed it without the Beef and with M&S falafels instead, which were just as tasty!
