Pancake Day falls on Tuesday 17th February this year, and best of all you can make this batter ahead of time, so you can pour, fry and serve for the quickest and most fun tea of the year!

Secret Pancake Ingredient

The secret ingredient? Butter – as if pancakes could get any more luxe! It’s not just melted butter, but cooked until nut-brown. It adds a rich, almost toasty flavour that takes this pancake recipe to the next level.

They’re thin, light and exactly how Pancake Day pancakes should be. So get your frying pan out and treat yourself and your tribe to this fail-safe, slightly ‘extra’ recipe!

Bettys’ Pancake Recipe (Makes 12)

Ingredients

  • 100g butter
  • 2 fresh eggs
  • 280ml milk
  • 110–115g plain flour
  • Pinch of salt

Method

  1. Melt the butter over a moderate heat and let it boil until nut-brown.
  2. Whisk the eggs, then add the milk.
  3. Sieve in the flour and salt and whisk the liquid in by hand until smooth.
  4. Pour in the hot butter all at once and whisk well.
  5. Heat a non-stick 20cm pan. No oil needed.
  6. Add a ladle of batter, swirl thinly, cook for about 2 minutes each side.

If the batter’s too thick, add a splash of milk. Pancakes can be made ahead and kept in the fridge for up to two days. Simple, classic, and utterly delicious! Enjoy!
